Sounds like you had an amazing time in Hanoi. I am travelling there soon, and you have inspired me to try some cooking lessons out there.

Great post! Glad you had so much fun in Hanoi. If you're still there and need more info on food and travel and cooking schools (though you found Hidden Hanoi, so great!) you should go to http://www.savourasia.com and go to the hanoi page. It'll also serve you well for armchair traveling to the markets, restaurants and beautiful places of Vietnam and China and Bangkok and other great corners of Asia.

LOL @ Tyler. That comment never ceases to make me chuckle but I'd have to agree with your sentiments!

I just today started thinking about looking into culinary arts after reading a post about cooking school. But, dog testicles belong on fear factor and if they made me cook that... let alone look at it... I'll keep my current job! Haha.

Nonetheless, VERY interesting post. I really enjoyed it so, thanks!

Just the pictures of the centiworms and dog testicles made my stomach spin and my gag reflex kicked in. I'm hoping the other guests in my hotel couldn't hear me gagging as I quickly read and those pictures disappeared from my screen. :)

I'm sure Dax and Mac will be using their cooking skills to woo many girls. I know I'm looking forward to having them join us in the kitchen when you get back.

I love seeing the pictures of the family and the boys look like they are having a blast.

We are very proud of what you are doing. I was visiting with a friend and he was talking about how important it is to really live life today because you just don't know what tomorrow will bring. I hope that Scott and I can raise our girls to enjoy life and take every opportunity to have an adventure, just as you are doing by going on this trip.

We love you and miss you and can't wait for the 4th of July 2008 menu :)

Is it too early to start planning the menu for the Fourth of July 2008?
I hope you can find a cooking school in other countries. What a fun and unexpected bonus of the trip. I congratulate the boys for their willingness to participate... but I guess they couldn't pass up a chance to wear those good looking aprons!
Again... the photos are amazing.

My friend Chris and I just met Tom in a hotel lobby in Hoi An. We are traveling in Vietnam with our wives and daughters (my 2 year old stayed back in the States). We arrived last night in Hoi An and have spent the previous 4 days in Hanoi. We also have found the Vietnamese food to be interesting and at times, delectable. The streets of Hanoi are a miranding adventure into cuisine choices. The Moca Cafe was a sumptuous lunch that came recommended by the locals at the Green Palm Gallery (great selection of original art by various Vietnamese artists). Soft spring rolls, fried pork spring rolls, chicken/vegs in a coconut milk soup were the hit of the table. Splurging led us to the Western-catering, western priced Bobby Chins; however, the meal did not disappoint. I would recommend the sampler appetizer as a meal (7-8 different Vietnamese offerings on one plate). The rest of our dining discoveries in Hanoi were close to the description that Tom provides above. Definitely enjoying them, though. We are just getting into Hoi An, and are looking forward to making our way around the old city center. It was great running into Tom. I commend the family on taking on the adventure and look forward to visiting the site again so that I can continue to follow the trip. Outstanding.
